Directions
3 TB Soy sauce
1/2 TB Lime peel -- grated
1 TB Lime juice
1/2 TB Hot pepper sauce
4 Chicken Breasts Without Skin
1/3 c Vegetable oil
4 c Lettuce -- shredded
Combine soy sauce lime peel, juice, pepper sauce. Pour 2 Tbl over
chicken in a large plastic bag. Press air out of bag; close top
securely; turn bag over to coat. Refrigerate 30 minutes; turn bag
over occasionally. Meanwhile, blend remaining sauce mixture with oil
in small bowl with fork. Line platter with lettuce. Remove chicken
from marinade and broil 7 minutes or each side; Arrange over lettuce.
Serve with remaining dressing.

The History of Recipes
Food historians have proved the existence of recipes back into ancient history, at least as far as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, mostly, these ancient cookbooks were just simple hieroglyphic instructions for meal preparation.
Progressing into The time of the romans 25BC a man called Apicius created some documents describing recipes enjoyed by wealthy Romans. In his works, he recounts how the meals were separated into hors d`oeuvres, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman chefs made use of a wide range of spices, including a few that are still present in modern kitchens such as thyme, rue and asafoetida. Over the next few centuries, the rich families of the West competed with each other to serve up the most extravagent banquests, and as a consequence, the best chefs and their collection of recipes were much in demand. However, it wasn`t until the 1800s that fine cooking and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, testing, and recording popular recipes of the day. By the arrival of the twentieth century, cooking publications were in high demand, as a result of more people being able to read, people having increased spare time and having more money. |
