The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions far back into history, at least as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, mostly, these old recipes were just very basic pictorial instructions for food preparation.
In fact, the oldest recipe in existence, according to experts in ancient history is a series of stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Later on, we find a couple of interesting books published in the fourteenth century ; a book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the spicy food that appears on menues today, but instead recipes for the types of meals enjoyed by the nobility of the time. For the centuries that followed, the powerful and rich houses competed with each other to serve up the most extravagent banquests, and as a consequence, the best chefs and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and publishing the recipes that were being prepared for the better households. By the time we get to the 20th century, cook books are in great demand, as a result of more people being able to read, people having increased free time and a general increase in wealth. |
