The History of Recipes
Experts have tracked the existance of recipes back into antiquity, in truth as far back into history as ancient Egypt, and possibly even further. In practice though, generally, these old records were just very basic hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe discovered, according to academics is a series of ancient tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in The time of the romans 25BC a man called Apicius compiled a number of scripts describing recipes cooked by his fellow Romans. In his publication, he describes how the meals were separated into starters, main meal and afters, something that is very familiar to us today. He also recounts how the Romans made use of many aromatic flavours, including some that we all recognise for example thyme, rue and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many spices and herbs from the holy land, such as coriander, parsley, basil and rosemary. These new spices and herbs was responsible for an explosion in manuscripts on food, some of which still exist in academic collections. Over the succeeding few centuries, the wealthy families of Wesstern Europe competed with each other to lay on the most exotic banquets, and consequentially cooks and their collection of recipes were at a premium. Even so, it was during the 19th century that formal cookery and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, trying out, and recording the recipes of their peers. The TV revolution brought us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes like the ones you can find on our site. |
