2 eggs
1 cup applesauce
2 tsp vanilla
1 1/2 cup sugar
2 cup grated zucchini
1 small mashed banana (soft)
2 cup white flour
1 cup whole wheat flour
1 tsp baking power
3/4 tsp baking soda
1 tsp cinnamon
3/4 tsp salt
1 cup chopped nuts
1/2 cup golden raisins
1/2 cup dark raisins
Directions
* This recipe uses applesauce instead of oil to reduce total fat* Beat
eggs. Add the applesauce, vanilla, sugar, zucchini and banana. Mix
together well and add remaining ingredients. Pour into 2 greased and
floured loaf pans (approx. 3x9x3 deep.) Preheat oven to 350 deg. and
bake for 45 minutes to 1 hour, or until toothpick inserted in center
comes out clean. Makes two loafs.

The History of Recipes
It is quite possible to trace the history of recipes back into ancient history, in fact as far back as early Egypt, and quite possibly further than that. Interesting though that is, in the main part, these ancient cookbooks were just very basic hieroglyphic or cunieform instructions for preparing meals.
During Roman times 25BC a man called Apicius created some documents showing how to cook the recipes cooked by the Romans. In his works, he describes how the meals of wealthy Romans were divided into starters, entrees and dessert, something we still use today. Aspicius recounts how the chefs of Roman times were skilled in the use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example bay, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from the Middle-East, including rosemary and coriander. These new foods and tastes was responsible for a surge in publications on food, most of which still exist in private libraries. Like it or not, the introduction of television brings us TV chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes just like those on our web site. |
