2 eggs
1 cup applesauce
2 tsp vanilla
1 1/2 cup sugar
2 cup grated zucchini
1 small mashed banana (soft)
2 cup white flour
1 cup whole wheat flour
1 tsp baking power
3/4 tsp baking soda
1 tsp cinnamon
3/4 tsp salt
1 cup chopped nuts
1/2 cup golden raisins
1/2 cup dark raisins
Directions
* This recipe uses applesauce instead of oil to reduce total fat* Beat
eggs. Add the applesauce, vanilla, sugar, zucchini and banana. Mix
together well and add remaining ingredients. Pour into 2 greased and
floured loaf pans (approx. 3x9x3 deep.) Preheat oven to 350 deg. and
bake for 45 minutes to 1 hour, or until toothpick inserted in center
comes out clean. Makes two loafs.

The History of Recipes
We can read the history of written recipes far back into antiquity, at least as far into history as pharonic Egypt, and quite possibly further than that. Interesting though that is, sadly, these ancient cook books were just basic hieroglyphic instructions for food preparation.
Progressing into Roman times around 25BC a roman called Apicius wrote a number of scripts detailing recipes cooked by his fellow Romans. In his scrolls, he describes how the meals were separated into appetizers, main meal and afters, something we still use today. This early Roman chef recounts how the early Romans used many different herbs and spices, including a few you will know for example basil, rue and parsley. Later on in the 1400s, people returning from the crusades brought back many foods and spices from middle-east cuisine, including spices like coriander, parsley, and basil. These new foods and tastes created an eruption in manuscripts on cooking, many of which still exist in private libraries. The introduction of the TV gave us TV cookery programs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like those on our site. |
