The History of Recipes
We are able to track the history of meal recipes way back into antiquity, in truth as far into history as the early Egyptians, and maybe further still. Interesting though that is, generally, these ancient recipes were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the most ancient recipe found, according to food historians are a few clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Later on, in The time of the roman empire around 25BC a roman called Apicius compiled a number of documents which described recipes cooked by wealthy roman citizens. In his works, he recounts how the roman meals were split into appetizers, entrees and dessert, something that is very familiar to us today. This early Roman chef tells us how the early Romans were skilled in the use of many different spices and herbs, including a few you will know such as basil, fennel and asafoetida. During the following few hundred years, the rich and powerful families of Wesstern Europe tried to offer the most exotic banquets, and as a result the best cooks and their recipes could command a high salary. However, it was during the 1800s that fine cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. By the time we get to the 1900s, cookery books were starting to become popular mostly due to increased literacy, people having more spare time and having more money to spend. |
