1/2 tsp salt
1 qt instant dried milk
1 dry sugar substitute equal
1 to 1 1/2 c sugar
Directions
Mix ingredients well and store in an airtight container in a
moderately cool place. Use 2 tbsp mix plus 6 ounces boiling water
per serving of cocoa. variations: Mexican Cocoa: Add 2-3 teaspoons of
cinnamon when mixing the total ingredients. or place a scant 1/8 tsp
in a cup of cocoa. Mocha: Add 1/3 cup instant coffee when mixing the
total ingredients; or place 1/2 teaspoon instant coffe in a cup of
the cocoa. Nutritive values per serving: CAL 49; CHO 4 gm; PRO 3 gm;
FAT 3 gm; NA 113 mg; Food exchanges per serving: 1/3 milk, 1/2 fat

The History of Recipes
We can trace the history of meal recipes way back into the distant past, at least as far as early Egypt, and possibly even further. Interesting though that is, mostly, these old cook books were just basic hieroglyphic instructions for food preparation.
Later on, in Roman times 25BC a roman called Apicius compiled a few documents detailing recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius informs us how the Roman cooks made use of many different spices, including some that we all recognise such as bay, mint and parsley. During the succeeding few hundred years, the rich and powerful families of Europe competed to lay on the most extravagent meals, and as a result the best chefs and their recipes were at a premium. However, it wasn`t until the 19th century the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collating, testing, and recording popular recipes of the day. By the arrival of the 1900s, cookery publications are highly popular mostly as a result of increased literacy, people having increased leisure time and having more money to spend. |
