The History of Recipes
We can follow the history of written recipes far back into ancient history, at least as far into history as early Egypt, and possibly even further than that. Interesting though that is, in the main part, these ancient recipes were just very basic hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe found, according to academics is a series of tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful. As we move into The time of the roman empire 25BC a roman called Apicius assembled a number of documents describing recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the roman meals were separated into starters, entrees and dessert, something we still use today. Additionally, he informs us how the ancient chefs made use of many different aromatic flavours, including a few that will be familiar to modern cooks such as thyme, fennel and dill. In the 15th century, knights returning from the crusades brought back many spices and herbs from the Middle-East, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices was responsible for an outbreak in recipe manuscripts, most of which are now in private libraries. By the arrival of the twentieth century, cookery publications were in high demand, mostly due to increased literacy, more leisure time and having more disposable income. The introduction of television brings us cooking programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to search through thousands of recipes like those on our site. |
