The History of Recipes
We can trace the history of meal recipes way back into distant history, in truth as far as ancient Egypt, and potentially, even further back. Interesting though that is, these, old cookbooks were just primitive hieroglyphic or cunieform recipes for preparing meals.
Later on, in Roman times around 25BC a roman called Apicius assembled a number of documents which described recipes prepared by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the cooks of Roman times were skilled in the use of many herbs, including some familiar names like thyme, mint and asafoetida. For the next few years, the upper-class families of the West tried to lay on the most exotic meals, and as a result the best chefs and their recipe collections became highly prized. However, it was during the 1800s that haute cuisine and recipe publications became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, verifying, and writing down recipes to allow everyone to enjoy them. By the advent of the twentieth century, cookery publications were increasing in popularity mostly as a result of increased literacy, people having increased spare time and disposable income. |
