3 cup lobster, crab, shrimp, or
1 sea legs -- cut up
1 tbsp lemon juice
2 eggs -- slightly beaten
2 cup light cream
2 tbsp butter
1 cup soft bread crumbs
1 cup buttered cracker crumbs --
1 saltines may be used
1 tsp prepared mustard
1 dash cayenne pepper
1/4 tsp fresh ground black pepper
1 salt -- to taste
Directions
Lobster may be frozen, canned, or fresh. Sprinkle lemon juice and
beaten eggs over lobster. Bring cream, butter, and bread crumbs just
to a boil; stir well together and pour over lobster. Stir mustard,
cayenne pepper, black pepper, and salt carefully into lobster
mixture. Pour into a buttered casserole dish and top with 1 cup
buttered cracker crumbs. Bake, uncovered, in a preheated oven at 350^
until crumbs are brown and lobster is bubbly - no more. ~D.Rattray~

The History of Recipes
Recipes as an idea can be found way back into history, in fact as far into history as the Egypt of the Pharoahs, and possibly even further. In practice though, generally, these early recipes were just very simple hieroglyphic recipes for preparing meals.
Later on, in The time of the romans 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes cooked by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, main meal and afters, a very modern way of dining. This early Roman chef tells us how the ancient cooks used many spices and herbs, including a few that will be familiar to modern cooks for example bay, rue and dill. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from Arab cooking, including spices such as coriander, parsley, and rosemary. These new culinary innovations caused an explosion in manuscripts on cooking, the majority of which are kept safe in private cookery archives. The TV revolution brings us TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to access thousands of recipes like the ones you can find on this site. |
