The History of Recipes
We are able to track the history of written recipes back into distant history, in fact as far back into history as early Egypt, and potentially, even further back. Interesting though that is, these, ancient records were just very basic hieroglyphic recipes for preparing meals.
The truth of the matter is, the most ancient recipe discovered, according to experts are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. As we move into The time of the romans around 25BC a man called Apicius compiled some documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and dessert, a very modern way of dining. This early Roman chef describes how the ancient chefs made use of a good variety of spices and herbs, including a few that will be familiar to modern chefs such as thyme, rue and asafoetida. As we move on, we have a couple of books which were published in the fourteenth century ; a recipe book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these are nothing to do with the indian food that we all know today, but rather descriptions of the types of meals prepared for the rich and wealthy people of that period. Later, in the fifteenth century, knights returning from the crusades brought us a variety of foods and herbs from the holy land, including spices like basil and coriander. The introduction of these new culinary ideas prompted a surge in recipe manuscripts, most of which still exist in academic collections. The revolution that is television brought us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to search through massive numbers of recipes such as those found on this site. |
