1 each onion, med, thinly sliced
1/2 cup vegetable oil
12 each green olives, pitted
4 cup tomatoes, chopped, 4 medium
2 each celery, stalks, chopped
2 each cloves garlic, finely chopped
2 each bay leaves
1/2 cup water
2 tbsp capers
1 tbsp oregano leaves, dried
1 tsp salt
1/4 tsp pepper
6 each chicken breasts halves, *
8 oz mushrooms, fresh, sliced
Directions
* Chicken Breast Halves should be boneless. Cook and stir onion in
oil in a 10-inch skillet until tender. Stir in remaining ingredients
except the chicken breasts and mushrooms. Heat to boiling; reduce
heat and simmer, uncovered, for 30 minutes. Place chicken, skin sides
up, in a single layer in skillet. Cover and cook over medium-low heat
for 30 minutes. Add mushrooms, cover and cook until chicken is done,
about 15 minutes longer.

The History of Recipes
It is quite feasible to follow the history of recipes back into antiquity, in truth as far back into history as pharonic Egypt, and maybe further still. In practice though, sadly, these ancient cookbooks were just primitive pictorial instructions for food preparation.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history is a series of clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of scripts which described recipes enjoyed by the Romans. In his publication, Apicius describes how the roman meals were separated into hors d`oeuvres, entrees and desserts, something we still use today. He also informs us how the cooks of his times made use of many spices and herbs, including a few that will be familiar to modern cooks for example basil, mint and asafoetida. Later, in the 15th century, the Crusaders brought back many new foods and herbs from Arab cuisine, including coriander, parsley, and rosemary. These new culinary innovations caused a surge in books on cookery, many of which are kept safe in academic collections. Like it or not, the introduction of TV brought us celebrity chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like the ones you can find on this recipe site. |
