The History of Recipes

We are able to follow the history of meal recipes way back into the distant past, in fact as far into history as the Egyptians, and maybe even further. In practice though, in the main part, these early cook books were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.

Fascinatingly, the oldest recipe discovered, according to experts in ancient history is a collection of tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated.

Progressing into The time of the romans 25BC a man called Apicius assembled a number of documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and desserts, a very modern way of dining. He also informs us how the chefs of Roman times were skilled in the use of many aromatic flavours, including a few that are still present in modern kitchens such as thyme, fennel and parsley.

Over the next few centuries, the powerful families of Wesstern Europe competed with each other to serve up the most exotic banquets, and consequentially the best chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 1800s that cookery and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collating, trying out, and recording popular recipes of the day.

By the arrival of the twentieth century, recipe publications were in high demand, due to better eduction, people having increased spare time and a general increase in wealth.
