1 tbsp olive oil
3 large onions, sliced (4 cups)
2 celery stalks, including
1 leaves, chopped
3 large cloves of garlic, minced
1 (about 3 teaspoons)
16 oz can, tomato sauce
1/4 cup vinegar
1/4 cup unsweetened cocoa
2 tbsp chili powder
2 tbsp basil
16 oz can, white kidney beans,
1 rinsed and drained
16 oz can, red kidney beans,
1 rinsed and drained
10 oz can, whole kernel corn
3 cup jarlsberg cheese, shredded
1 (12 oz.)
Directions
Heat oil in a large saucepan. Saute onion, cleery, and garlic until
transparent, about 5 minutes. Stir in tomato sauce, vinegar, cocoa,
chili powder, and basil. Simmer 15 minutes, stirring occasionally.
Add beans and corn. Simmer 15 minutes longer. Stir in 2 cups of the
cheese. Sprinkle remaining cheese on top of chili before serving.

The History of Recipes
Food historians have proved the existance of recipes far back into antiquity, certainly as far back into history as the early Egyptians, and possibly even further than that. Having said that, sadly, these old cook books were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Later on, in Roman times 25BC a roman called Apicius wrote some scripts which described recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals were divided into appetizers, main meal and dessert, something that is very familiar to us today. Aspicius informs us how the early Romans made use of many different herbs and spices, including many that are still in use today for example thyme, mint and parsley. In the fifteenth century, people returning from the crusades brought back many new foods and herbs from the holy lands, including spices such as basil and coriander. These new spices and herbs led to an explosion in publications on food, some of which are kept safe in academic collections. By the arrival of the 1900s, cook books are increasing in popularity mostly as a result of better eduction, increased leisure time and having more disposable income. |
