1 tbsp olive oil
3 large onions, sliced (4 cups)
2 celery stalks, including
1 leaves, chopped
3 large cloves of garlic, minced
1 (about 3 teaspoons)
16 oz can, tomato sauce
1/4 cup vinegar
1/4 cup unsweetened cocoa
2 tbsp chili powder
2 tbsp basil
16 oz can, white kidney beans,
1 rinsed and drained
16 oz can, red kidney beans,
1 rinsed and drained
10 oz can, whole kernel corn
3 cup jarlsberg cheese, shredded
1 (12 oz.)
Directions
Heat oil in a large saucepan. Saute onion, cleery, and garlic until
transparent, about 5 minutes. Stir in tomato sauce, vinegar, cocoa,
chili powder, and basil. Simmer 15 minutes, stirring occasionally.
Add beans and corn. Simmer 15 minutes longer. Stir in 2 cups of the
cheese. Sprinkle remaining cheese on top of chili before serving.

The History of Recipes
We are able to track the history of `recipes` back into the far past, in fact as far back as the Egyptians, and maybe further still. Interesting though that is, mostly, these old recipes were just very simple hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts in ancient history are a few stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into The time of the romans around 25BC a man called Apicius created a few documents showing how to cook the recipes cooked by wealthy roman citizens. In his works, he recounts how the meals were separated into hors d`oeuvres, main course and afters, something we still use today. He also describes how the chefs of Roman times used a good variety of herbs and spices, including many that are still in use today such as thyme, fennel and dill. During the next few centuries, the rich families of Wesstern Europe strove to offer the best banquets, and consequentially the best cooks and their collection of recipes increased in prestige. However, it wasn`t until the nineteenth century the formal cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and recording popular recipes of the day. By the advent of the 20th century, cooking publications are greatly in demand due to better eduction, people having more leisure time and a general increase in wealth. |
