The History of Recipes
It is possible to trace the history of `recipes` far back into antiquity, at least as far back into history as the Egyptians, and possibly even further. Interesting though that maybe, sadly, these early recipes were just very simple hieroglyphic recipes for food preparation.
Fascinatingly, the oldest recipe in existence, according to historians are some ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. During the time of the Roman Empire a roman called Apicius compiled a few documents describing recipes prepared by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the cooks of his times made use of a wide range of herbs and spices, including a few that will be familiar to modern chefs like thyme, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back many foods and spices from Arab countries, including spices like rosemary and coriander. These new herbs and spices prompted a torrent in recipe books, some of which are now in private libraries. Over the following few hundred years, the rich and powerful families of Europe competed with each other to offer the most extravagent banquests, and as a consequence, the best chefs and their recipe collections were much in demand. Nevertheless, it wasn`t until the nineteenth century that cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, verifying, and publishing recipes that were common in the better off homes of the day. By the arrival of the 20th century, cookery publications are in great demand, as a result of more people being able to read, people having increased free time and having more money. Like it or not, the introduction of television brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to search through thousands of recipes just like those on our site. |
