1 1/2 lb of ground beef
1/4 cup old fashioned or quick oats, uncook, ed
2 eggs, beaten
1 tablesppon worcestershire sauce
1 tsp pepper
8 oz package of philadelpha cream cheese, , softened
4 oz can chopped green chilis, drained
3/4 cup of salsa

`Mexican Meatloaf Roll

Combine meat, oats, eggs, worcestershire sauce and pepper; mix well.
On wax paper, press meat mixture into 20 x 10 1/2-inch rectangle.
Combine cream cheese and chilies; mix well. Spread cream cheese
mixture over meat mixture to within 1 inch of outer edge. Roll, jelly
roll fashion, starting at narrow end. Place in 12 x 8-inch baking
dish. Bake at 350 F, 40 minutes. Top with salsa; continue baking at
10 minutes. Let stand 10 minutes before serving.
Makes 6 to 8 servings

The History of Recipes
It is possible to read the history of written recipes way back into history, in truth as far as ancient Egypt, and maybe even further. However, mostly, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In fact, the most ancient recipe in existence, according to historians are some tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Later, there were two interesting cookery books which date from the 1300s : one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, they are unconnected to the curry that is familiar to us all today, but instead descriptions of the types of meals served to the nobility of the period. For the decades that followed, the rich and powerful families of Europe tried to lay on the most exotic meals, and as a consequence, chefs and their collection of recipes were much in demand. Even so, it was during the 19th century that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and recording popular recipes of the day. The arrival of television brings us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
