New England Fish Chowder Recipe

Ingredients

1 lb cod fillet, skinned
1 cup savoury biscuit crumbs
8 oz onion, finely chopped
4 oz butter
1 lb peeled potatoes
1 pt milk
1 salt and pepper
2 tbsp chopped, fresh parsley


Directions

Cut the cod into 1-inch pieces. fry half the biscuit crumbs and onion
gently in 2 oz butter until the onion has softened.

cut the potatoes into half inch dice, put into a large saucepan with
the milk and boil gently for 10 minutes until the potato is just
cooked. Add the fish, onion mixture, the rest of the butter and
season generously.

Bring back to the boil and simmer for five to six minutes more until
the fish is cooked. To serve, spoon into bowls and serve with the
remaining crumbs and chopped parsley sprinkled over the top.

In the fifteenth century, people returning from the crusades brought us many new spices and herbs from Arab cooking, such as coriander, basil and rosemary. These new foods and spices prompted an increase in cookery books, many of which are now in private cookery archives.

The introduction of television brings us celebrity TV chefs and the accompanying recipe books.
