The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions way back into ancient history, at least as far back as the ancient Egyptians, and quite possibly further than that. Interesting though that is, generally, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe in existence, according to academics is a series of clay tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius created a collection of scripts detailing recipes cooked by wealthy roman citizens. In his works, he recounts how the meals were split into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Romans made use of many aromatic flavours, including many that are still in use today like bay, fennel and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many spices and herbs from Arab cooking, including spices like parsley, basil and rosemary. The introduction of these new culinary ideas created a surge in manuscripts on food, the majority of which still exist in private libraries. By the time we get to the twentieth century, cooking publications are in great demand, mostly due to more people being able to read, people having increased free time and having more disposable income. Like it or not, the introduction of TV brought us TV cookery programs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
