The History of Recipes
Written cooking instructions as a concept can be traced back into the far past, certainly as far back as ancient Egypt, and maybe even further. In practice though, these, old cook books were just very simple pictorial recipes for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to experts in ancient history are some clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Progressing into The time of the roman empire around 25BC a man called Apicius created a number of documents describing recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something we still use today. Aspicius informs us how the ancient cooks were skilled in the use of many different spices and herbs, including a few you will know like thyme, rue and asafoetida. In the 15th century, knights returning from the crusades brought us many foods and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. The introduction of these new culinary ideas created an explosion in books on cooking, most of which still exist in academic collections. The arrival of TV brings us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like those on this site. |
