The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into the distant past, in truth as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. Having said that, in the main part, these ancient cook books were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
As we move into The time of the roman empire around 25BC a roman called Apicius created a few scripts which described recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into appetizers, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Roman cooks made use of many different aromatic flavours, including many that are still in use today for example bay, rue and dill. Over the following few centuries, the families of Europe tried to serve the most extravagent banquests, and because of this the best chefs and their recipe collections were highly sought after. Nevertheless, it was during the nineteenth century that formal cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to assembling, trying out, and recording the recipes of their peers. By the time we get to the twentieth century, recipe publications were greatly in demand mostly due to increased literacy, people having more leisure time and a general increase in wealth. |
