1 cup orzo pasta
6 oz smoked turkey breast -- cut
1 in 1/4 cubes
1/2 cup green onions -- thinly
1 sliced
1/4 cup red cabbage -- finely
1 shredded
1/4 cup fresh cilantro, chopped and
1 loosely packed
3 tbsp lemon juice
2 tbsp regular or lowfat
1 mayonnaise
2 tsp olive oil
Directions
Cook the orzo according to the package directions, but without adding
the salt. Drain, then rinse with cold water and drain again.
In a large bowl, combine the orzo, turkey, onions, cabbage and
cilantro. In a small bowl, stir together the lemon juice, mayonnaise
and oil. Add to the orzo mixture and toss until well coated. Recipe By

The History of Recipes
Written recipes as a concept can be observed back into the distant past, in truth as far back into recorded history as the ancient Egyptians, and possibly even further. Having said that, generally, these old records were just very basic hieroglyphic instructions for food preparation.
Much later, in Roman times a man called Apicius assembled some documents which described recipes prepared by his fellow Romans. In his works, he tells us how the roman meals were separated into appetizers, entrees and desserts, a style of dining still practiced today. Additionally, he recounts how the early Romans were skilled in the use of many aromatic flavors, including some that we all recognise like bay, fennel and dill. Over the succeeding few hundred years, the powerful families of Europe tried to serve the most exotic banquets, and as a result cooks and their recipe collections became highly prized. Nevertheless, it was during the 1800s that cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collating, trying out, and writing down recipes to allow everyone to enjoy them. When we get to the twentieth century, recipe publications were increasing in popularity mostly due to increased literacy, more free time and disposable income. |
