The History of Recipes
We are able to follow the history of meal recipes way back into history, in truth as far back into recorded history as the early Egyptians, and possibly even further than that. Having said that, sadly, these ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the most ancient recipe discovered so far, according to academics is a collection of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. During Roman times around 25BC a man called Apicius compiled a few scripts which described recipes prepared by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Aspicius also tells us how the ancient cooks were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern cooks for example bay, mint and parsley. In the fifteenth century, knights returning from the crusades brought us many new foods and herbs from middle-east cuisine, including spices such as coriander, parsley, and basil. The introduction of these new foods and spices caused an eruption in cookery books, many of which are now in private collections. Like it or not, the introduction of television brought us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes just like those on sites such as this. |
