1 medium eggplant
1/2 cup cottage cheese, low fat
2 tbsp onion, chopped
1 tsp bay leaf, ground
1 tsp basil
1 tsp oregano
2 tbsp tomato sauce
1 wheat germ
2 oz provolone cheese
Directions
Cook 1 medium eggplant in boiling water covered, for 5 minutes. Drain
and cut in 2 lengthwise. Scoop out the insides leaving a hald ince
shell. Mash eggplant with the cottage cheese, onion, bay leaf, basil,
oregano, and tomato sauce. Preheat oven to 350^F. Stuff eegplant
halves, place in a casserole dish and bake covered for 15 min. Add a
little water to the bottom of the casserole to keep the eggplant
moist. Top with wheat germ and provolone cheese. BAke for 5 more
minutes, uncovered.

Nevertheless, it wasn`t until the 1800s that fine cookery and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, verifying, and recording the recipes of their peers. When we get to the twentieth century, cookbooks were greatly in demand mostly as a result of higher levels of literacy, people having increased free time and a general increase in wealth. The TV revolution gave us TV chefs and the demand for the accompanying recipe books.
