The History of Recipes
We are able to read the history of written recipes way back into distant history, in fact as far into history as the ancient Egyptians, and potentially, even further back. Interesting though that maybe, in the main part, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the romans around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and desserts, a very modern way of dining. This early Roman chef informs us how the chefs of Roman times were skilled in the use of many different spices, including a few that are still present in modern kitchens such as thyme, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back a variety of spices and herbs from the East, including spices like parsley, basil and rosemary. The introduction of these new herbs and spices caused an eruption in recipe books, most of which are now in private libraries. By the advent of the 20th century, cookery publications were greatly in demand mostly due to increased literacy, people having increased leisure time and a general increase in wealth. |
