The History of Recipes

Transcribed cooking instructions as a concept can be observed far back into the distant past, at least as far back into recorded history as pharonic Egypt, and possibly even further. Interesting though that maybe, in the main part, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for meal preparation.

In an interesting twist, the oldest recipe found, according to experts are some tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful.

Much later, in Roman times a roman called Apicius created a few scripts describing recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. He also recounts how the ancient cooks made use of a good variety of spices and herbs, including a few that are still present in modern kitchens such as thyme, mint and parsley.

Later on, in the 15th century, people returning from the crusades brought us many foods and spices from the Middle-East, such as coriander, parsley, and basil. The introduction of these new herbs and spices prompted a surge in recipe books, the majority of which still exist in private cookery archives.

Over the succeeding few hundred years, the families of Europe competed with each other to serve up the most extravagent banquests, and as a result cooks and their recipes were highly sought after. Even so, it wasn`t until the 1800s that cookery and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and recording the recipes that were being prepared for the better households.

When we get to the twentieth century, cookbooks were in high demand, as a result of increased literacy, more free time and disposable income.
