The History of Recipes
Written cooking instructions as a concept can be tracked way back into the distant past, in truth as far back into history as ancient Egypt, and maybe further still. Having said that, in the main part, these ancient recipes were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to historians is a collection of clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Later on, in The time of the romans 25BC a man called Apicius assembled a collection of scripts which described recipes enjoyed by the Romans. In his scrolls, he tells us how the roman meals were separated into starters, main meal and dessert, a style of dining still practiced today. He also tells us how the Roman chefs used many different herbs and spices, including many that are still in use today like bay, mint and asafoetida. Later on, in the 15th century, the Crusaders brought back many new spices and herbs from the East, including coriander, parsley, and basil. These new foods and spices was responsible for an eruption in publications on food, many of which still exist in private cookery archives. When we get to the 20th century, recipe books are increasing in popularity mostly due to increased literacy, more leisure time and having more money. The TV revolution brought us celebrity chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access thousands of recipes like those on our web site. |
