8 each chicken breast halves
1 egg
1/2 cup bread crumbs
2 tbsp butter
1 3/4 cup spaghetti sauce
1/2 cup mozzarella cheese
1 tbsp parmesan cheese
1/4 cup parsley
Directions
Preparation:
remove the skin from chicken breasts slightly beat the eggs shred the
mozzarella cheese grate the parmesan cheese chop the parsley
Using palm of hand flatten chicken to even thickness. Dip chicken
into egg then into crumbs to coat. In skillet over medium heat, in
hot margarine, brown chicken on both sides. Add spaghetti sauce.
Reduce heat. Cover and simmer for 10 minutes. Sprinkle with cheeses
and parsley. Cover, simmer for 5 minutes or until cheese melts.

The History of Recipes
Written recipes as an idea can be tracked back into antiquity, in truth as far as the early Egyptians, and potentially, even further back. Interesting though that is, generally, these early cook books were just basic hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the most ancient recipe discovered, according to academics are some stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Progressing into Roman times 25BC a man called Apicius compiled a collection of documents which described recipes prepared by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into appetizers, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the early Romans made use of a good variety of herbs and spices, including some that we all recognise like basil, rue and asafoetida. Later on, in the 15th century, the Crusaders brought back many new spices and herbs from the holy lands, including spices like coriander, parsley, and basil. The introduction of these new culinary ideas created an explosion in manuscripts on cookery, some of which are now in private collections. Over the succeeding few centuries, the powerful families of Europe tried to lay on the most exotic banquets, and consequentially the best chefs and their recipes were much in demand. However, it was during the 19th century that cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording recipes to allow everyone to enjoy them. When we get to the twentieth century, cooking books were increasing in popularity mostly due to better eduction, people having increased leisure time and having more disposable income. The TV revolution brought us celebrity chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes such as those found on our web site. |
