The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions far back into distant history, in truth as far as early Egypt, and maybe even further. Having said that, in the main part, these old cookbooks were just very basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a roman called Apicius created some scripts which described recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were split into starters, main course and dessert, a style of dining still practiced today. Aspicius also tells us how the Roman cooks used many herbs and spices, including some that we all recognise like thyme, fennel and parsley. During the succeeding few centuries, the powerful and rich tried to lay on the most extravagent meals, and consequentially chefs and their recipe collections were greatly in demand. Notwithstanding that, it was during the nineteenth century that fine cookery and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, verifying, and writing down recipes that were common in the better off homes of the day. By the time we get to the twentieth century, cookbooks are increasing in popularity mostly as a result of better eduction, leisure time and being a little richer. Like it or not, the introduction of TV gave us celebrity chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes like the ones you can find on our web site. |
