1 2 chicken breasts -- split
Directions
4 TB Oil
4 TB Butter
1/4 c Sweet vermouth
40 c Garlic; peeled -- whole
Melt butter in frying pan. Add oil. Brown chicken well on both
sides. Remove chicken. Add garlic and saute for about a minute. Add
dry vermouth. Stir. Put chicken back in the pan on top of garlic.
Cover and simmer about one hour, turning chicken every once in a
while. When done serve chicken with cloves of garlic. Garlic will pop
out of the shell easily and you can either mash it onto some hot
bread or eat it plain with the chicken. The garlic carmelizes when
cooked with the vermouth and it is almost sweet-tasting. Good luck

Written recipes as an idea can be traced way back into the far past, certainly as far as the early Egyptians, and possibly even further. However, these, old cookbooks were just basic hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the romans 25BC a roman called Apicius assembled a collection of documents detailing recipes prepared by the Romans. In his works, he recounts how the meals of wealthy Romans were split into appetizers, entrees and afters, something we still use today. He also describes how the cooks of his times were skilled in the use of many different spices, including some that we all recognise such as bay, mint and dill. Over the succeeding few centuries, the upper-class families of Europe competed to lay on the most exotic banquets, and consequentially chefs and their recipe collections increased in prestige. Nevertheless, it was during the 1800s the formal cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. The TV revolution brings us TV cooks and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes like those on this web site. |
