Directions
MIX FIRST 4 INGREDIENTS AND POUR OVER CHICKEN PLACED IN A LARGE PAN.
MARINATE, ROTATING PIECES HOURLY FOR THREE HOURS.
PLACE ON GRILL UNTIL DONE, BASTING WITH MARINADE AS NEEDED.

The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into the far past, in fact as far back into recorded history as pharonic Egypt, and maybe even further. In practice though, in the main part, these early cook books were just primitive pictorial recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to academics are a few ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. As we move into The time of the romans 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes prepared by his fellow Romans. He describes how the meals of wealthy Romans were split into appetizers, entrees and dessert, a very modern way of dining. He also informs us how the chefs of Roman times were skilled in the use of a wide range of spices and herbs, including a few that are still present in modern kitchens such as thyme, rue and dill. Closer to modern times, we have a couple of books which were published in the 1300s - a cookery book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are a little misleading though, these two books are nothing to do with the indian food that we all know today, but instead recipes for the types of meals prepared by the cooks of the rich and powerful of that period. Later, in the 15th century, knights returning from the crusades brought back many new foods and spices from Arab cooking, including spices such as coriander, parsley, and rosemary. The introduction of these new tastes led to an outbreak in recipe manuscripts, the majority of which are kept safe in private collections. During the succeeding few centuries, the upper-class families of Wesstern Europe strove to serve the most extravagent meals, and as a consequence, chefs and their recipes were much in demand. Notwithstanding that, it was during the 1800s that fine cookery and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and recording the recipes that were being prepared for the better households. By the time we get to the twentieth century, cooking books are starting to become popular as a result of more people being able to read, leisure time and having more disposable income. Like it or not, the introduction of TV brings us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes just like those on this site. |
