The History of Recipes
Written recipes as an idea can be tracked back into antiquity, at least as far back into history as the early Egyptians, and quite possibly further than that. Having said that, generally, these old cook books were just basic pictorial instructions for preparing food.
In an interesting twist, the oldest recipe found, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. Progressing into Roman times 25BC a man called Apicius compiled a collection of documents describing recipes prepared by wealthy roman citizens. In his works, he tells us how the roman meals were separated into hors d`oeuvres, main meal and dessert, a very modern way of dining. This early Roman chef describes how the Romans used many different spices and herbs, including some that we all recognise such as bay, mint and dill. Continuing our culinary historical journey, there are some recipe books dating from the fourteenth century ; one book called `Forme of Cury`, and another called `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the curry that we all know today, but instead recipes for the types of meals cooked for the rich people of that period. Later on, in the 15th century, the Crusaders brought back many spices and herbs from the Middle-East, including spices like parsley and basil. These new foods and spices created an eruption in publications on food, most of which are kept safe in private libraries. When we get to the twentieth century, recipe publications were in great demand, mostly due to increased literacy, people having increased free time and being a little richer. The TV revolution brought us TV cookery programs and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to access thousands of recipes like those on this site. |
