The History of Recipes
We can trace the history of meal recipes back into antiquity, at least as far back as the Egypt of the Pharoahs, and maybe even further. In practice though, sadly, these early recipes were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. Later on, there are two recipe books published in the 1300s - one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these two books have no connection with the indian food that is familiar to us all today, but rather accounts of the types of meals on the menues of the upper classes. For the next few years, the powerful families of Europe competed to serve up the most extravagent banquests, and consequentially chefs and their recipes were highly sought after. Notwithstanding that, it was during the 19th century that fine cookery and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collecting, trying out, and publishing recipes that were common in the better off homes of the day. By the advent of the twentieth century, cooking books were in great demand, as a result of better eduction, leisure time and being a little richer. The introduction of the TV brought us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to access massive numbers of recipes like the ones you can find on sites such as this. |
