The History of Recipes
Historians have tracked the existance of recipes way back into the distant past, certainly as far into history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, in the main part, these old records were just very simple pictorial instructions for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to historians is a series of tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius created a few scripts showing how to cook the recipes prepared by the Romans. In his publication, Apicius tells us how the meals were separated into hors d`oeuvre, main meal and dessert, a very modern way of dining. He also tells us how the chefs of Roman times used a wide range of aromatic flavors, including a few you will know like basil, mint and parsley. In the 15th century, people returning from the crusades brought us many new foods and herbs from Arab cooking, including spices such as parsley and basil. These new herbs and spices caused an eruption in recipe manuscripts, the majority of which still exist in private cookery archives. Over the next few hundred years, the families of Europe strove to lay on the most extravagent meals, and as a consequence, chefs and their recipe collections were greatly in demand. Even so, it wasn`t until the 19th century that fine cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to assembling, trying out, and writing down recipes to allow everyone to enjoy them. The arrival of TV gave us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes just like those on sites such as this. |
