The History of Recipes
We are able to trace the history of meal recipes back into ancient history, in fact as far back into history as pharonic Egypt, and maybe even further. In practice though, these, ancient recipes were just very simple hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history are a few clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated. During the time of the Romans a man called Apicius compiled a collection of documents detailing recipes enjoyed by his fellow Romans. He describes how the meals were divided into hors d`oeuvre, main course and dessert, a very modern way of dining. Additionally, he describes how the ancient cooks made use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs for example bay, mint and dill. In the 15th century, the Crusaders brought back a variety of foods and herbs from Arab countries, including coriander, parsley, and basil. The introduction of these new tastes prompted an increase in recipe publications, most of which are now in academic collections. Over the next few hundred years, the powerful families of Europe competed to serve up the most extravagent meals, and as a consequence, the best cooks and their recipes increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, trying out, and publishing recipes common in their social group. The arrival of TV brought us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes such as those found on our site. |
