The History of Recipes
It is possible to follow the history of meal recipes back into history, in truth as far back into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, these, old recipes were just primitive pictorial recipes for preparing meals.
In fact, the most ancient recipe found, according to food historians are some clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans around 25BC a man called Apicius compiled a few scripts which described recipes enjoyed by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and desserts, a very modern way of dining. Aspicius informs us how the Romans used a good variety of spices, including a few that are still present in modern kitchens for example thyme, rue and dill. Later on in the 1400s, knights returning from the crusades brought us many new foods and spices from the East, including spices such as parsley, basil and rosemary. The introduction of these new culinary ideas caused an outbreak in recipe books, most of which are kept safe in private collections. For the decades that followed, the wealthy families of Wesstern Europe tried to serve up the most extravagent banquests, and as a result chefs and their collection of recipes could command a high salary. However, it wasn`t until the 1800s that cookery and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and recording the recipes of their peers. The arrival of television brought us celebrity chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes such as those found on this recipe site. |
