The History of Recipes
Historians have tracked the existence of recipes far back into history, at least as far back as the early Egyptians, and maybe even further. Having said that, these, early recipes were just simple hieroglyphic instructions for preparing meals.
Fascinatingly, the oldest recipe found, according to historians are some clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Progressing into Roman times around 25BC a roman called Apicius wrote a few documents detailing recipes prepared by wealthy roman citizens. In his publication, he tells us how the meals were split into hors d`oeuvres, main meal and afters, something that is very familiar to us today. Aspicius describes how the ancient Romans were skilled in the use of many aromatic flavors, including a few that are still present in modern kitchens such as basil, rue and dill. Later on, we find a couple of cookery books published in the 1300s : a book called `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books are unconnected to the spicy food that appears on menues today, but instead recipes for the types of food prepared by the cooks of the upper classes of the period. In the 15th century, the Crusaders brought back many new spices and herbs from the holy lands, such as coriander, parsley, basil and rosemary. These new herbs and spices created an eruption in manuscripts on food, the majority of which are kept safe in private libraries. When we get to the 20th century, cookery publications were highly popular mostly due to increased literacy, people having increased free time and disposable income. |
