The History of Recipes
It is actually possible to trace the history of written recipes back into distant history, in truth as far back as the ancient Egyptians, and possibly even further. In practice though, mostly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe found, according to food historians is a collection of clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. As we move into Roman times 25BC a man called Apicius compiled a number of scripts which described recipes cooked by his fellow Romans. He describes how the meals were divided into starters, main course and afters, a very modern way of dining. Aspicius also informs us how the ancient cooks were skilled in the use of many different herbs and spices, including some familiar names such as basil, fennel and asafoetida. During the following few centuries, the wealthy families of Wesstern Europe tried to offer the most exotic meals, and as a result chefs and their recipe collections were at a premium. Notwithstanding that, it was during the nineteenth century that cooking and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collating, verifying, and writing down popular recipes of the day. By the advent of the 1900s, recipe publications are starting to become popular mostly due to increased literacy, more spare time and having more money to spend. The revolution that is television brought us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes like those on our site. |
