The History of Recipes
Transcribed cooking instructions as a concept can be tracked back into antiquity, in fact as far into history as the Egyptians, and maybe even further. In practice though, these, old records were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the most ancient recipe discovered, according to historians are a few ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Later on, in The time of the romans 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the Roman chefs made use of many different herbs and spices, including some familiar names like thyme, rue and asafoetida. Continuing our culinary historical journey, there are some books from the 1300s - one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these books are nothing to do with the indian food that is served today, but rather recipes for the types of meals prepared by the chefs of the rich and powerful of that time. Later on, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from the holy lands, including spices such as coriander, parsley, and basil. The introduction of these new culinary ideas created a surge in recipe manuscripts, the majority of which still exist in private libraries. Over the succeeding few centuries, the powerful families of Europe strove to serve up the best banquets, and consequentially chefs and their recipes were much in demand. However, it wasn`t until the 1800s that fine cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collating, verifying, and writing down recipes to help cooks of their time. When we get to the 20th century, recipe publications were greatly in demand due to better eduction, leisure time and having more money. The TV revolution brought us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes like those on our web site. |
