The History of Recipes
We are able to read the history of `recipes` back into the far past, at least as far back as the Egyptians, and possibly even further. Having said that, sadly, these early cook books were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the oldest recipe found, according to academics are a few tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. As we move into The time of the romans around 25BC a man called Apicius created a number of documents detailing recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into starters, main course and dessert, something we still use today. Aspicius recounts how the cooks of Roman times made use of many herbs, including a few that will be familiar to modern chefs like thyme, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from the East, including spices such as coriander, parsley, basil and rosemary. These new foods and spices was responsible for an increase in manuscripts on food, many of which are now in academic collections. During the next few centuries, the rich families of Wesstern Europe competed to serve up the best banquets, and as a result chefs and their collection of recipes were at a premium. Nevertheless, it was during the nineteenth century that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing recipes to help cooks of their time. By the advent of the 20th century, cooking publications are in great demand, due to increased literacy, more spare time and having more disposable income. |
