The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into history, certainly as far back into history as the ancient Egyptians, and maybe even further. Having said that, these, old recipes were just primitive hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to food historians is a collection of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a roman called Apicius wrote a few documents detailing recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main meal and afters, something that is very familiar to us today. He also tells us how the chefs of Roman times made use of a wide range of aromatic flavours, including many that are still in use today like bay, fennel and dill. Later, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from Arab cuisine, including spices such as coriander, parsley, basil and rosemary. These new culinary innovations prompted an explosion in manuscripts on cooking, some of which are kept safe in academic collections. During the following few centuries, the powerful and wealthy competed to serve the most exotic meals, and because of this chefs and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, trying out, and recording recipes to allow everyone to enjoy them. The revolution that is television gave us TV cooks and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
