The History of Recipes

Written cooking instructions as an idea can be found way back into the distant past, certainly as far back into recorded history as pharonic Egypt, and maybe further still. However, in the main part, these ancient cook books were just very basic hieroglyphic recipes for food preparation.

In an interesting twist, the oldest recipe discovered so far, according to experts in ancient history is a series of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`.

As we move into The time of the roman empire around 25BC a man called Apicius assembled a number of documents detailing recipes enjoyed by wealthy Romans. He describes how the meals of wealthy Romans were separated into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the ancient Romans were skilled in the use of a wide range of herbs, including many that are still in use today like basil, fennel and asafoetida.

In the 15th century, the Crusaders brought back a variety of foods and spices from middle-east cuisine, including rosemary and coriander. These new herbs and spices was responsible for an explosion in recipe publications, some of which are kept safe in academic collections.

Over the next few hundred years, the powerful families of Wesstern Europe competed to serve the most extravagent meals, and because of this the best cooks and their recipe collections increased in prestige. Nevertheless, it was during the 19th century that haute cuisine and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, verifying, and recording recipes that were common in the better off homes of the day.

When we get to the 1900s, recipe books are highly popular as a result of higher levels of literacy, people having more leisure time and a general increase in wealth.
