The History of Recipes
It is quite possible to track the history of written cooking instructions back into distant history, in fact as far back into history as ancient Egypt, and possibly even further. However, generally, these ancient cookbooks were just very simple hieroglyphic instructions for meal preparation.
Progressing into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls showing how to cook the recipes enjoyed by the Romans. In his publication, he recounts how the meals were divided into hors d`oeuvres, main meal and afters, something we still use today. Additionally, he tells us how the cooks of his times used a wide range of spices and herbs, including a few you will know such as basil, mint and dill. Later, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from the East, such as parsley, basil and rosemary. These new foods and spices caused an eruption in manuscripts on cookery, most of which still exist in private collections. By the time we get to the twentieth century, recipe books were greatly in demand mostly due to increased literacy, more free time and having more money to spend. |
