The History of Recipes
Historians have traced the existence of recipes far back into the distant past, at least as far back into history as pharonic Egypt, and potentially, even further back. In practice though, mostly, these old recipes were just very simple pictorial recipes for preparing food.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire 25BC a man called Apicius compiled some documents describing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, something we still use today. This early Roman chef tells us how the Roman cooks used many spices, including a few that are still present in modern kitchens for example thyme, rue and dill. During the following few hundred years, the wealthy families of Europe competed with each other to offer the most extravagent meals, and as a result the best chefs and their recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that fine cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collating, testing, and recording the recipes of their peers. The arrival of television brought us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to access thousands of recipes like the ones you can find on this web site. |
