The History of Recipes
Food historians have proved the existance of recipes far back into the far past, at least as far back as pharonic Egypt, and possibly even further. Interesting though that maybe, in the main part, these old records were just very basic hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe discovered, according to food historians is a series of clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. As our culinary historical trip moves on a few more years we find two recipe books which were published in the 1300s ; a cookery book called `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books are not about the indian food that is served today, but instead recipes for the types of meals served to the rich. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the holy land, including spices like coriander, parsley, and rosemary. These new foods and spices created a torrent in recipe manuscripts, some of which are kept safe in private libraries. During the following few centuries, the rich families of Wesstern Europe tried to serve the best banquets, and consequentially the best chefs and their recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that fine cookery and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. By the advent of the 1900s, cooking publications were increasing in popularity due to better eduction, people having increased free time and having more money. Like it or not, the introduction of TV brings us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like the ones you can find on this recipe site. |
