The History of Recipes

Written cooking instructions as a concept can be found far back into antiquity, certainly as far back into history as pharonic Egypt, and maybe further still. Interesting though that is, these, old recipes were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.

Fascinatingly, the oldest recipe discovered so far, according to academics are a few clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful.

During Roman times 25BC a man called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the roman meals were separated into appetizers, entrees and desserts, a style of dining still practiced today. This early Roman chef recounts how the cooks of his times used a good variety of aromatic flavours, including many that are still in use today like thyme, mint and dill.

Closer to modern times, we have a couple of books from the 14th Century - one book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these two books are nothing to do with the indian curry that is popular today, but instead descriptions of the types of food prepared for the nobility of those days.

Later, in the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from Arab countries, such as coriander, parsley, and rosemary. The introduction of these new herbs and spices led to a surge in books on cooking, many of which are kept safe in academic collections.

By the time we get to the twentieth century, cooking books are greatly in demand due to more people being able to read, people having more free time and having more money.
