The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions back into the far past, in fact as far back into history as the Egypt of the Pharoahs, and potentially, even further back. Having said that, sadly, these ancient records were just very basic hieroglyphic or cunieform instructions for preparing meals.
In fact, the most ancient recipe discovered so far, according to academics are a few stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into Roman times around 25BC a man called Apicius created a number of scripts showing how to cook the recipes enjoyed by the Romans. In his works, Apicius tells us how the meals were divided into hors d`oeuvre, main course and afters, something that is very familiar to us today. Aspicius also recounts how the ancient Romans made use of a wide range of spices, including many that are still in use today like basil, fennel and dill. Later on, we have some books published in the fourteenth century : a cookery book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, these are unconnected to the spicy food that appears on menues today, but rather descriptions of the types of meals on the tables of the rich and powerful of the period. Later on in the 1400s, knights returning from the crusades brought us a variety of foods and spices from Arab cuisine, including spices like coriander, parsley, basil and rosemary. These new spices and herbs caused a torrent in manuscripts on cookery, some of which still exist in academic collections. For the centuries that followed, the rich families of the West strove to serve up the most extravagent banquests, and because of this the best chefs and their collection of recipes were at a premium. Even so, it wasn`t until the nineteenth century that cooking and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collating, trying out, and writing down recipes common in their social group. By the time we get to the 1900s, cooking books were starting to become popular as a result of higher levels of literacy, more free time and having more money to spend. The arrival of television brought us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like the ones you can find on sites such as this. |
