The History of Recipes
We are able to trace the history of `recipes` back into the far past, certainly as far back into history as pharonic Egypt, and possibly even further than that. Having said that, mostly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the most ancient recipe in existence, according to historians are a few clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. Later on, in Roman times 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius describes how the meals were divided into starters, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the chefs of Roman times used many herbs and spices, including some familiar names for example bay, rue and asafoetida. In the fifteenth century, the Crusaders brought back a variety of foods and herbs from Arab cooking, such as coriander, parsley, basil and rosemary. These new herbs and spices was responsible for an eruption in manuscripts on cookery, the majority of which are now in private libraries. During the succeeding few centuries, the wealthy families of the West strove to offer the most exotic meals, and as a consequence, cooks and their collection of recipes were much in demand. Nevertheless, it was during the 19th century that cooking and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and writing down recipes of the day. Like it or not, the introduction of television brought us TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access thousands of recipes like the ones you can find on our web site. |
