The History of Recipes
It is actually possible to trace the history of written cooking instructions way back into ancient history, certainly as far back as the ancient Egyptians, and maybe even further. Having said that, these, early cook books were just simple hieroglyphic instructions for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to academics are some tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into Roman times around 25BC a man called Apicius created a collection of scripts describing recipes cooked by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into appetizers, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the cooks of his times were skilled in the use of a good variety of spices, including a few that will be familiar to modern chefs for example thyme, fennel and dill. Later, in the 15th century, knights returning from the crusades brought us many spices and herbs from middle-east cuisine, including spices such as basil and coriander. These new culinary innovations led to an eruption in manuscripts on cookery, the majority of which are kept safe in academic collections. By the advent of the 1900s, recipe books were in high demand, mostly due to higher levels of literacy, leisure time and having more disposable income. The revolution that is television brought us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on this recipe site. |
