The History of Recipes
Historians have tracked the existance of recipes far back into antiquity, certainly as far into history as the early Egyptians, and maybe even further. Having said that, these, old records were just basic hieroglyphic or cunieform instructions for food preparation.
During the time of the Roman Empire a roman called Apicius wrote a number of scripts describing recipes cooked by the Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. Aspicius informs us how the chefs of Roman times made use of a good variety of aromatic flavours, including a few that are still present in modern kitchens such as basil, mint and dill. Over the following few hundred years, the powerful and rich houses competed with each other to lay on the best banquets, and as a consequence, chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that fine cookery and recipe publications became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, trying out, and recording popular recipes of the day. The introduction of television gave us cooking programs and the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes such as those found on our site. |
