The History of Recipes
It is possible to follow the history of meal recipes way back into the far past, in fact as far as the early Egyptians, and possibly even further. Interesting though that maybe, in the main part, these early records were just very basic pictorial instructions for food preparation.
In fact, the most ancient recipe found, according to academics are a few stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Later on, in The time of the romans around 25BC a roman called Apicius assembled a collection of documents showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were separated into starters, main course and desserts, a style of dining still practiced today. This early Roman chef describes how the Roman cooks were skilled in the use of a good variety of aromatic flavors, including a few that are still present in modern kitchens such as bay, fennel and asafoetida. For the decades that followed, the upper-class families of Europe strove to lay on the most exotic banquets, and as a result chefs and their recipe collections were much in demand. Even so, it was during the nineteenth century the formal cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collecting, trying out, and recording popular recipes of the day. The arrival of television brings us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everyone to access thousands of recipes such as those found on sites such as the one you are reading now. |
