The History of Recipes
We can trace the history of written recipes far back into antiquity, certainly as far back as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, sadly, these old cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Later on, in Roman times 25BC a man called Apicius assembled some documents showing how to cook the recipes prepared by wealthy Romans. In his works, he describes how the meals were split into appetizers, main course and desserts, something we still use today. This early Roman chef recounts how the cooks of his times were skilled in the use of many different herbs and spices, including a few you will know such as thyme, fennel and dill. In the fifteenth century, the Crusaders brought back many new foods and herbs from the Middle-East, including coriander, parsley, basil and rosemary. These new herbs and spices created a torrent in books on cookery, most of which still exist in academic collections. Like it or not, the introduction of television brought us celebrity TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing everyone to access thousands of recipes like those on our web site. |
