The History of Recipes
We are able to track the history of `recipes` back into the far past, in fact as far back into history as the ancient Egyptians, and maybe further still. Having said that, mostly, these old recipes were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to academics is a series of clay tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. As we move into The time of the romans around 25BC a man called Apicius created a few documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, a very modern way of dining. This early Roman chef recounts how the Roman cooks were skilled in the use of many different aromatic flavors, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought us a variety of spices and herbs from Arab cuisine, including basil and rosemary. The introduction of these new foods and spices caused an increase in books on cooking, the majority of which are kept safe in private collections. During the next few centuries, the rich families of Wesstern Europe strove to serve up the most exotic banquets, and because of this the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, trying out, and publishing recipes to help cooks of their time. The revolution that is television brings us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to access massive numbers of recipes like those on sites such as this. |
