The History of Recipes
Experts have found proof that recipes existed back into distant history, in truth as far back into history as early Egypt, and potentially, even further back. Interesting though that is, generally, these old cookbooks were just very basic hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe found, according to Professor Solomon Katz, are some tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in Roman times 25BC a man called Apicius compiled some documents which described recipes enjoyed by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. Additionally, he describes how the Romans used a wide range of spices and herbs, including a few that will be familiar to modern chefs like basil, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought us many new foods and herbs from the Middle-East, including spices like rosemary and coriander. The introduction of these new culinary ideas created an eruption in publications on food, many of which are kept safe in private libraries. During the succeeding few centuries, the wealthy families of Europe tried to serve up the most extravagent meals, and as a result the best chefs and their recipe collections were highly sought after. However, it wasn`t until the 19th century that fine cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and publishing recipes to help cooks of their time. By the arrival of the 1900s, recipe books were increasing in popularity mostly as a result of increased literacy, people having increased leisure time and being a little richer. The arrival of television gave us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through thousands of recipes such as those found on the site you are now reading. |
