The History of Recipes
We are able to track the history of written recipes far back into the distant past, in truth as far as the ancient Egyptians, and possibly even further. Having said that, mostly, these early records were just very simple hieroglyphic recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to historians is a collection of tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. As we move into The time of the romans around 25BC a roman called Apicius created a few scripts which described recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were split into hors d`oeuvres, main course and desserts, a style of dining still practiced today. He also tells us how the cooks of his times were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern chefs like basil, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us many new spices and herbs from the holy land, such as rosemary and coriander. The introduction of these new foods and spices caused a torrent in books on cookery, many of which still exist in private cookery archives. During the next few centuries, the families of Europe tried to lay on the most exotic banquets, and consequentially cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collecting, testing, and publishing recipes to allow everyone to enjoy them. By the advent of the 20th century, cookbooks were increasing in popularity mostly due to better eduction, more free time and having more money. The revolution that is television gave us celebrity chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes such as those found on this site. |
