1/4 cup butter
1 cup almond paste
1 cup rich milk or light cream
1/2 cup sugar
1/2 cup toasted almonds, ground
6 egg yolks
1 tsp vanilla
Directions
Cream butter until it is soft. Add almond paste a little at a time,
alternating with milk. Stir in sugar and ground nuts. Cook over
medium heat, stirring constantly until cream thickens. Stir a few
tablespoons of hot, thickened cream into egg yolks. Then pour
egg-yolk mixture into remaining cream, stirring briskly. Return to
low heat. Continue to cook and stir until cream thickens a little
more, being careful not to let it boil. When mixture is cool, add
vanilla.

The History of Recipes
We are able to read the history of written recipes far back into history, at least as far as the early Egyptians, and possibly even further than that. In practice though, generally, these ancient recipes were just simple pictorial recipes for meal preparation.
The truth of the matter is, the oldest recipe discovered, according to experts in ancient history are a few clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. As we move on, we find two interesting books dating from the 14th Century ; a book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the spicy food that we all know today, but instead recipes for the types of meals prepared for the upper classes of that period. Later, in the fifteenth century, people returning from the crusades brought back many spices and herbs from the holy land, such as rosemary and coriander. These new culinary innovations prompted a torrent in books on cooking, most of which are kept safe in private libraries. During the next few centuries, the powerful and wealthy competed with each other to serve the most exotic banquets, and consequentially cooks and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century the formal cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. By the advent of the 20th century, cook books were in high demand, mostly due to better eduction, people having more free time and a general increase in wealth. The revolution that is television gave us cooking programs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to access massive numbers of recipes just like those on this recipe site. |
