The History of Recipes
Experts have found proof that recipes existed far back into distant history, in fact as far into history as the ancient Egyptians, and potentially, even further back. Interesting though that is, these, early recipes were just primitive pictorial recipes for preparing food.
During Roman times 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the ancient cooks used a good variety of herbs, including a few that are still present in modern kitchens for example bay, rue and asafoetida. During the succeeding few centuries, the powerful and wealthy strove to serve up the most exotic banquets, and consequentially the best chefs and their collection of recipes could command a high salary. However, it wasn`t until the 19th century that haute cuisine and cookery books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, verifying, and recording recipes of the day. By the arrival of the 1900s, cookbooks are greatly in demand mostly due to better eduction, people having increased leisure time and having more money to spend. |
