The History of Recipes
It is actually possible to trace the history of written recipes way back into ancient history, in fact as far back into history as the Egyptians, and possibly even further. In practice though, generally, these early cook books were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the oldest recipe discovered so far, according to academics is a collection of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. Progressing into The time of the romans around 25BC a man called Apicius assembled a few documents describing recipes cooked by the Romans. In his publication, Apicius recounts how the meals were separated into starters, main meal and dessert, something that is very familiar to us today. Additionally, he describes how the early Romans used a good variety of aromatic flavours, including many that are still in use today like thyme, mint and dill. During the next few hundred years, the powerful families of the West competed with each other to lay on the most extravagent banquests, and because of this the best cooks and their recipe collections were at a premium. Notwithstanding that, it was during the 19th century that fine cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, trying out, and recording recipes to allow everyone to enjoy them. By the time we get to the twentieth century, recipe books are in high demand, as a result of higher levels of literacy, more leisure time and having more disposable income. |
