The History of Recipes
Academics have traced the existence of recipes way back into the far past, certainly as far as ancient Egypt, and possibly even further. Having said that, mostly, these ancient cookbooks were just very simple pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe in existence, according to experts is a series of clay tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. As our culinary historical trip moves to more modern times we have a couple of cookery books which date from the 1300s : a recipe book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these books have no connection with the curry that is served today, but rather descriptions of the types of food prepared by the chefs of the rich and powerful of that period. Over the next few centuries, the upper-class families of Wesstern Europe competed to lay on the most exotic meals, and as a consequence, chefs and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to collecting, trying out, and writing down recipes of the day. By the arrival of the twentieth century, cooking books are highly popular mostly due to more people being able to read, more spare time and disposable income. |
