The History of Recipes
Experts have traced the existance of recipes back into the distant past, in truth as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, sadly, these early records were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe found, according to experts are some stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. During Roman times 25BC a man called Apicius assembled a number of scripts which described recipes prepared by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and desserts, something we still use today. Aspicius also informs us how the Roman cooks made use of a wide range of spices, including a few that will be familiar to modern cooks such as bay, rue and parsley. Closer to modern times, there are two interesting cookery books published in the fourteenth century ; a recipe book titled `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the indian curry that is familiar to us all today, but rather accounts of the types of food served to the nobility of those days. In the fifteenth century, the Crusaders brought back many new foods and spices from the East, including basil and coriander. These new culinary innovations caused a surge in books on cooking, most of which still exist in private cookery archives. By the arrival of the 1900s, recipe publications were increasing in popularity as a result of increased literacy, more leisure time and disposable income. |
