The History of Recipes
Written cooking instructions as an idea can be traced way back into the far past, certainly as far back into history as the early Egyptians, and maybe further still. Having said that, in the main part, these ancient records were just very basic hieroglyphic instructions for meal preparation.
Progressing into The time of the romans 25BC a man called Apicius compiled some scripts detailing recipes enjoyed by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main meal and dessert, a very modern way of dining. Additionally, he recounts how the early Romans were skilled in the use of a wide range of aromatic flavors, including a few that will be familiar to modern chefs such as thyme, mint and asafoetida. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including rosemary and coriander. These new herbs and spices led to an eruption in publications on food, the majority of which are kept safe in private cookery archives. By the arrival of the twentieth century, recipe books were highly popular due to higher levels of literacy, people having more leisure time and being a little richer. |
