The History of Recipes
We can follow the history of meal recipes far back into the distant past, at least as far back into recorded history as early Egypt, and potentially, even further back. However, generally, these early recipes were just very simple hieroglyphic recipes for preparing meals.
In fact, the oldest recipe in existence, according to food historians are some stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Progressing into The time of the roman empire 25BC a roman called Apicius created a few scripts describing recipes prepared by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main meal and afters, something we still use today. This early Roman chef describes how the Roman cooks were skilled in the use of many different aromatic flavours, including many that are still in use today such as thyme, mint and dill. Later on in the 1400s, people returning from the crusades brought us many foods and herbs from Arab countries, including spices like basil and coriander. These new foods and spices caused an explosion in manuscripts on cooking, many of which still exist in private collections. For the centuries that followed, the families of Europe competed with each other to serve up the most extravagent meals, and as a consequence, the best chefs and their recipe collections could command a high salary. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, trying out, and recording popular recipes of the day. By the time we get to the 20th century, cookbooks were in great demand, mostly as a result of more people being able to read, people having increased spare time and having more money to spend. |
