The History of Recipes
Recipes as a concept can be observed way back into the distant past, in fact as far back into recorded history as ancient Egypt, and potentially, even further back. Having said that, generally, these ancient cookbooks were just very simple hieroglyphic instructions for food preparation.
Fascinatingly, the most ancient recipe in existence, according to historians are a few stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. As our culinary historical trip moves to more modern times there are a couple of books which date from the fourteenth century - one book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the curry that is served today, but instead recipes for the types of meals enjoyed by the rich people of those days. In the 15th century, people returning from the crusades brought back many foods, spices and herbs from Arab cuisine, including parsley and basil. The introduction of these new herbs and spices prompted an increase in books on cooking, most of which are now in private cookery archives. Over the next few centuries, the powerful and wealthy houses competed to offer the best banquets, and because of this the best cooks and their recipe collections were highly sought after. Even so, it wasn`t until the nineteenth century that fine cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, testing, and writing down recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cook books are in great demand, due to higher levels of literacy, people having more spare time and disposable income. The introduction of television gave us TV cookery programs and the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on this site. |
