The History of Recipes
Recipes as an idea can be found back into the distant past, at least as far into history as the early Egyptians, and possibly even further than that. Interesting though that maybe, sadly, these old cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe found, according to food historians are a few tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Later on, in The time of the romans 25BC a man called Apicius assembled a number of documents detailing recipes cooked by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, entrees and desserts, a very modern way of dining. Additionally, he informs us how the ancient Romans made use of a good variety of herbs, including some that we all recognise for example bay, rue and dill. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from the Middle-East, such as basil and rosemary. These new spices and herbs caused an outbreak in cookery books, most of which are kept safe in private collections. Over the succeeding few centuries, the powerful families of Wesstern Europe competed to offer the best banquets, and as a result cooks and their collection of recipes could command a high salary. Even so, it wasn`t until the 1800s the formal cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, verifying, and writing down recipes common in their social group. When we get to the 20th century, recipe publications were in great demand, due to increased literacy, people having more free time and having more money to spend. The arrival of TV brought us TV cookery programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on the site you are now reading. |
